Grape Varieties

Cabernet Sauvignon

One of the best-known grape varieties worldwide. However, it is relatively young sort. In 17-th century in Northwest France accidentally appears a hybrid of Cabernet Franc and Sauvignon Blanc. Its popularity is due to the modest nature of terroir. The wine of this variety is characterized by its aggressiveness. The complex of flavors and aromas include red pepper, pepper, spices, red and stone fruits.


Merlot

Bulgaria is one of the largest producers of Merlot in the world. The sort is modest and is doing well in places with lower temperature than the average in the country. There are two main schools in the cultivation of the Merlot: "Chateau Petrus", who prefer the earlier collection of fruit in order to keep the fines and the potential for aging the produced wine and "Rolland", who choose the later vintage, to obtain stronger fruit flavors and aromas.

Fermented wines of this variety are characterized by fruity aromas. Typical is the taste of well-baked plum, red stone fruit, and relatively high acidity gives freshness in taste and body.

Mavrud

Symbolic and unique variety of grape for Bulgaria. Matures late and is extremely difficult to be fermented, due to its high acidity. It grows only in the Asenovgrad region.

Fermented wines from this grape variety are characterized by mineral tones in taste, wild berries aroma, complex shades of velvet, harshness and density of the body.

Chardonnay

Chardonnay is a white grape variety used for winemaking. Its origin is France, Burgundy. In consequence of its domination by the terroir there is no expressed production style.

In Bulgaria, Chardonnay is characterized by its fruit flavors, fine structure and body. It is diggiculd to find well aged in oak barrels Chardonnay in our country.

Muscat Ottonel

The variety has a French origin. Dry white wines made from this variety are spectacular, with very intense aroma with flowery character, reminiscent of violets and geranium, a significant moderate density and freshness. The wines are consumed young. From this variety are produced very good dessert wines.

Traminer

This is a widespread variety of wine grapes. It is not particularly pretentious to climate. The wines fermented by this variety, bearing characteristics of terroir, which has grown from final-grassy tones, to peaceful tropical hues.

Well chilled, Traminer combines very well with fish and sushi.
